World’s Best Vegan Baked Oatmeal

My partner Fálki and I eat a lot of oatmeal. It’s a healthy choice for breakfast, although I know I tend to add more maple syrup than I probably should. C’est la vie.

I change things up by sometimes making Scottish oats or Irish oats, but usually I stick with rolled oats. Or maybe I’ll add strawberries or blueberries. Or some coconut-based yogurt.

Still, it gets boring.

Then one day I happened upon a recipe for vegan baked oatmeal in a Facebook group that revolves around eating a kidney-friendly, plant-based diet. I made it the next morning, and it was so good!

Disc Golf Goals for 2022

I’ve been playing disc golf for right at two years now. While I am happy with my progress so far, and while I win my MA60 age-protected division somewhat often, I still need a lot of work on my game.

As we began 2022, I saw a lot of posts on social media about disc golf goals. Most of the goals I’ve seen from other people are about improving their PDGA rating, throwing longer off the tee, getting more aces.

A chase for aces does not make sense for the way I want to play disc golf. Ace runs for me most often do not lead to easy birdies. My goal on an ace-runnable hole is an easy birdie.

I love disc golf!

Disc golf. Who knew? My friend Zakk Shanks knew.

Back in December 2019, Zakk and I were talking, and he asked whether I’d ever played disc golf. I’d never tried it, and had only sort of heard of it, but was immediately intrigued. Golf? With frisbees? What’s not to like?

I say I’d sort of heard of it, because my other friend Paul Normandin and I had briefly discussed Ultimate Frisbee, which he plays. I had no idea what UF was, so in my mind it was disc golf. Our conversation that day was cut very short for some reason, so I never clarified.

Nevertheless, the day after that discussion with Paul, I’d ordered an Innova starter set from Amazon, for disc golf not Ultimate, and they’d been in my closet ever since.

Anyway, I love walking, but I like to have a reason for it, so disc golf sounded right up my alley. Zakk and I set up a time to play, and I met him at the Trinity University disc golf course for my first disc golf experience.

I was hooked. I sucked, but I was hooked. What a challenge!
